Zucchini Patties
Ingredients:
- 2 large zucchinis (about 300 g)
- 1 onion or shallot
- 1 clove of garlic (optional)
- Fresh herbs: flat-leaf parsley, mint, basil, or coriander
- 1 egg
- 1 tsp flour
- 2 tablespoons of cream (regular or vegetable-based)
- Salt and pepper
- Paprika, curry, Espelette pepper, etc.
- Butter or oil for frying
Preparation:
- Wash, dry, and grate the zucchinis. Place them in a clean tea towel and squeeze tightly to remove excess juice.
- Finely chop the onion or shallot, as well as the fresh herbs.
- Mix the grated zucchinis with the chopped onion/shallot and herbs. Add the cream and the whole egg, and mix well.
- Gradually incorporate the flour, salt, pepper, and desired spices into the mixture, ensuring even distribution.
- Heat 20 g of butter and a small amount of sunflower oil in a frying pan over medium heat.
- Spoon small portions of the zucchini mixture into the pan, flattening them to form pancakes. Cook for approximately 3 minutes on each side, or until golden brown.
- Transfer the cooked patties to a plate lined with absorbent paper to drain any excess oil.
- Serve the zucchini patties hot and enjoy!
