Weekly Favorite Baked Cod
My husband has been requesting this dish every week for the past two months!
Ingredients:
- 4 cod filets (approximately 6 ounces each)
- 2 tablespoons unsalted butter, melted
- 1 lemon, juiced and zested
- 2 garlic cloves, minced
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Preparation:
- Preheat the oven: Set your oven to 400°F (200°C) and lightly grease a baking dish.
- Season the fish: Place the cod filets in the baking dish and season with salt and pepper to taste.
- Prepare the lemon butter sauce: In a small bowl, combine the melted butter, lemon juice, lemon zest, and minced garlic.
- Coat the filets: Pour the lemon butter mixture over the cod filets, ensuring each piece is evenly coated.
- Bake: Place the dish in the preheated oven and bake for 12-14 minutes, or until the fish flakes easily with a fork.
- Garnish and serve: Remove from the oven and garnish with fresh parsley before serving.
Variations & Tips:
- Crumb Topping: For added texture, mix panko breadcrumbs with melted butter and sprinkle over the cod before baking.
- Healthier Option: Substitute olive oil for butter to reduce saturated fat.
- Spicy Twist: Add a sprinkle of red pepper flakes to the lemon butter mixture for a spicy kick.
- Citrus Swap: If lemons are too tart for your liking, use oranges for a sweeter citrus flavor.
This simple yet flavorful recipe is sure to become a staple in your home as it has in mine. Enjoy!
