Triple Chocolate Mousse Cake
Ingredients:
- For the cake:
- 5 eggs
- 150 g powdered sugar
- 135 g wheat flour
- 15 g unsweetened cocoa powder
- For the ganache:
- 200 g dark chocolate
- 20 cl liquid cream
- For the glaze:
- 150 g dark chocolate
- 8 cl peanut oil
- For greasing the pan:
- 10 g soft butter
- 10 g wheat flour
Yields: Enough for 6 people
Instructions:
- For the cake:
- Preheat the oven to 200°C (392°F).
- Grease the pan with butter and flour.
- Mix the flour and cocoa powder.
- In a blender, beat eggs and sugar until very foamy and tripled in volume.
- Gently fold in the flour and cocoa mixture until combined.
- Pour the batter into the prepared pan.
- Bake at 200°C for 20 minutes.
- Allow to cool completely.
- For the ganache:
- Place chocolate chips in a bowl.
- Heat the cream in a saucepan until it boils, then pour half of it over the chocolate chips.
- Let it sit for a moment, then gently stir until the chocolate is melted and smooth.
- Gradually add the remaining cream while stirring, ensuring it is well incorporated.
- Allow the ganache to cool.
- For assembly:
- Once the cake has cooled completely, cut it into three slices horizontally.
- Spread a layer of ganache between each slice.
- Pour the remaining ganache over the top of the cake, allowing it to cover the entire surface.
- In a separate bowl, melt the dark chocolate for the glaze, then stir in the peanut oil.
- Pour the glaze over the ganache layer, allowing it to drip down the sides of the cake.
- Refrigerate until set.
