Ingredients
Filling:
- 5 cups of peaches, peeled and diced (fresh or frozen)
- 2 cups of all-purpose flour
- 1 cup of sugar
- 1 cup of whole milk
- 4 teaspoons of baking powder
- 1 teaspoon of sea salt
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of nutmeg
Topping:
- 3/4 cup of brown sugar
- 3/4 cup of granulated sugar
- 3 tablespoons of unsalted butter
- 3 cups of water
- 1/2 teaspoon of nutmeg
Optional Garnish:
- Ice cream
- Whipped cream
- Cool whip
Preparation Steps
1. Preheat the Oven:
Preheat your oven to 400º F. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
2. Prepare the Topping:
In a large saucepan over medium heat, combine brown sugar, granulated sugar, and nutmeg. Add the butter and water, stirring until the sugar is fully dissolved. Bring the mixture to a boil, then remove from heat and set aside.
3. Prepare the Filling:
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Gradually whisk in the milk and vanilla extract until the mixture is smooth. Gently fold in the diced peaches.
4. Assemble the Pudding:
Pour the peach filling into the prepared baking dish. Evenly pour the topping mixture over the filling.
5. Bake:
Place the dish in the preheated oven and bake for 50-55 minutes. If necessary, cover the dish with aluminum foil to prevent over-browning. The pudding is done when it is cooked through and golden on top.
6. Cool and Serve:
Remove the pudding from the oven and let it cool for about 15 minutes before serving.
Serving Suggestion:
Serve warm, optionally garnished with ice cream, whipped cream, or cool whip.
