Tater Tot Sausage Breakfast Casserole

Ingredients:

  • 8 eggs
  • 1 pound Jimmy Dean pork sausage
  • 1 1/2 cups whole milk or heavy cream
  • 1 package frozen tater tots (approximately 24 oz)
  • 2 cups cheddar cheese
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp garlic powder

Directions:

  1. Preheat the oven to 375°F and generously spray a 9 x 13 pan with nonstick cooking spray.
  2. Brown the sausage over medium heat in a skillet, breaking it into small pieces. Drain any excess grease and set aside.
  3. In a bowl, whisk together 8 eggs, 1 1/2 cups of heavy cream (or whole milk), and all the spices.
  4. Arrange frozen tater tots at the bottom of the dish to form a full layer.
  5. Layer the precooked sausage on top of the tater tots, followed by 2 cups of cheddar cheese. Pour the whisked egg mixture over the layers.
  6. Cover the casserole dish with foil to prevent the edges from cooking too quickly.
  7. Bake the tater tot casserole for 40 minutes initially. Remove the foil and bake for an additional 15-20 minutes or until the center egg is fully cooked. Check around the 40-45 minute mark, as some ovens may cook faster.
  8. Serve hot and garnish with sour cream, tomatoes, salsa, or crispy bacon.

Note: You may need a 32 oz bag of tater tots, and there could be some leftovers. Enjoy this delicious breakfast casserole!
