Sweet Onion Casserole
Ingredients:
- 1/4 cup uncooked basmati rice
- 5 cups water
- 1/2 cup butter
- 3 pounds sweet onion, coarsely chopped
- 1 cup half-and-half
- 1 teaspoon salt
- 2 cups Swiss cheese, divided
Preparation:
- Preheat the oven to 350°F (175°C) and butter a 2-liter baking dish.
- In a saucepan, bring the water to a boil and add the rice. Stir, reduce heat, and simmer until the rice is tender, about 5 minutes. Drain the rice and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onions and cook, stirring occasionally, until translucent but not browned, about 8 minutes.
- Combine the cooked onions and butter in the skillet with the cooked rice. Stir in the half-and-half, salt, and 1 3/4 cups of Swiss cheese.
- Transfer the mixture to the prepared baking dish and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
- Bake in the preheated oven until the rice is tender and the top is golden brown, about 1 hour.
