Swedish Meatball Noodle Bake
Ingredients:
For The Meatballs:
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large beaten egg
- ½ cup breadcrumbs
- ½ grated onion
- ½ teaspoon garlic powder
- ¼ teaspoon ground nutmeg
- 1 teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
For The Casserole:
- 2 ½ cups egg noodles
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 pint heavy cream
- 1 ½ cups grated Swiss cheese
- Fresh chopped parsley for serving
- Kosher salt and freshly ground black pepper to taste
Instructions:
Step 1: Preheat the oven to 375 degrees F. Grease a 9 x 13-inch baking dish with nonstick spray and set aside.
Step 2: In a large bowl, combine beef, breadcrumbs, beaten egg, grated onion, nutmeg, garlic powder, salt, and pepper. Form 1 ½ tablespoons of the mixture into meatballs and set aside.
Step 3: Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, then transfer them to a plate.
Step 4: Cook the noodles in salted boiling water for two minutes less than the package instructions.
Step 5: In the same skillet, add broth, heavy cream, and Worcestershire sauce. Simmer for about 10 minutes until slightly thickened. Season with salt and pepper, then remove from heat.
Step 6: Place the cooked noodles in the prepared baking dish, top with meatballs, pour the sauce over them, and sprinkle with cheese.
Step 7: Bake in the preheated oven for approximately 20 minutes until the cheese is melted and bubbly. Remove from the oven and let it rest for 5 minutes.
