Ingredients:

  • 5 eggs, beaten
  • Broccoli, cut into florets

  • 1 red pepper, chopped
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
  • Black pepper
  • 1 garlic clove, finely chopped
  • Dill, chopped
  • Salt
  • Rice

Instructions:

1. Cook the Rice:

Add salt to the rice and cook it covered until the rice is tender and the water is fully absorbed (approximately 18-20 minutes). Set aside.

2. Prepare the Vegetables:

Heat olive oil in a large skillet or wok over medium heat. Sauté the carrots until they begin to soften. Add the broccoli florets and chopped red pepper. Cook until the vegetables are thoroughly tender. Stir in mushrooms and dried ginger, cooking until all vegetables are soft yet still firm.

3. Prepare the Egg Mixture:

In a bowl, beat the eggs with soy sauce, ketchup, and mayonnaise to enhance the flavor.

4. Combine Ingredients:

Push the vegetables to the side of the pan. Pour the egg mixture into the center, allowing it to set slightly before mixing it with the vegetables. Add the cooked rice and mix thoroughly with the vegetables and eggs. Stir-fry for a few minutes to blend the flavors.

5. Add Final Touches:

Incorporate the chopped garlic and season with salt and black pepper. Cook for an additional minute or two.

6. Garnish and Serve:

Remove from heat. Sprinkle with chopped dill for an added burst of color and flavor. Serve hot and savor the delightful textures and flavors of this stir-fried rice and broccoli dish.
