Recipe: Stir-Fried Broccoli and Carrots with Chicken
Ingredients
For the Chicken:
- 1 chicken fillet, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon black pepper
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1/2 cup chicken broth or water
- 1 teaspoon sugar
Optional:
- Sesame seeds
- Green onions, chopped
- Cooked rice
Equipment:
- Large frying pan or wok

Instructions:
Marinate the Chicken:
- In a bowl, combine the diced chicken with soy sauce, cornstarch, and black pepper. Let it marinate for at least 10 minutes while preparing the other ingredients.
Prepare the Sauce:
- In a small bowl, mix together 3 tablespoons of soy sauce, oyster sauce (if using), hoisin sauce (if using), sesame oil, chicken broth, and sugar. Set aside.
Cook the Chicken:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the marinated chicken and cook for 3-4 minutes until almost cooked through and lightly browned.
- Remove the chicken from the pan and set aside.
Stir-Fry the Vegetables:
- Add another tablespoon of vegetable oil to the pan.
- Add chopped garlic and ginger, cooking for about 30 seconds until fragrant.
- Add broccoli florets and carrots. Stir and cook until the vegetables are tender, about 4-5 minutes.
Combine and Finish:
- Return the chicken to the pan.
- Pour the prepared sauce over the chicken and vegetables.
- Mix well and cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.
Serve:
- Sprinkle with sesame seeds and green onions if desired.
- Serve the stir-fry hot over steamed or fried rice.
