Southwestern Chicken Wrap Recipe
Ingredients:
- 2 cups cooked chicken, shredded
- 4 large flour tortillas
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- 1 cup corn kernels (fresh or thawed from frozen)
- 1 red bell pepper, thinly sliced
- 1/2 cup shredded lettuce
- 1/2 cup shredded cheddar cheese
- 1/4 cup cilantro, chopped
- 2 tablespoons sour cream
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 lime, juiced
- Salt and pepper to taste
Directions:
- In a large bowl, combine the shredded chicken with chili powder, cumin, lime juice, olive oil, salt, and pepper. Mix thoroughly to ensure the chicken is evenly coated with the spices.
- Lay out the flour tortillas. Spread a small amount of sour cream on each tortilla, then layer with seasoned chicken, black beans, corn, red bell pepper, avocado slices, lettuce, and cheddar cheese.
- Sprinkle chopped cilantro over the fillings for added freshness.
- Carefully fold the tortillas over the fillings, tucking in the edges to form tight wraps.
- Heat a grill pan over medium heat and grill each wrap for about 2-3 minutes on each side, until the tortillas are nicely marked and the cheese is melted.
- Serve warm, optionally cutting each wrap in half for easier handling.
Variations & Tips:
This recipe is highly versatile. For a vegetarian version, omit the chicken and add more beans, quinoa, or grilled tofu. If you enjoy spicy food, consider adding diced jalapeños or a splash of hot sauce to the chicken mixture. For a gluten-free option, replace the flour tortillas with your preferred gluten-free wraps.
