Southern Style Potato Salad
Ingredients:
- 3 pounds medium Russet potatoes
- 1 cup mayonnaise
- 1/4 cup yellow mustard
- 2 teaspoons apple cider vinegar
- 2 teaspoons sugar
- 1/2 teaspoon onion powder
- 1/4 cup sweet pickle relish
- 1 stalk celery, chopped
- 1/2 sweet onion, chopped
- 4 hard-boiled eggs (3 chopped and 1 sliced)
- Paprika
Instructions:
- Begin by halving each potato and placing them in a large pot. Cover the potatoes with water, ensuring they are submerged by at least 1 inch.
- Add 2 teaspoons of salt to the pot and bring the water to a simmer. Cook the potatoes for approximately 20 minutes, or until they are fork-tender. Drain the potatoes well.
- Once the potatoes have cooled, peel and discard the skins.
- Transfer the peeled potatoes to a large bowl and cut them into bite-sized pieces using a knife.
- In a separate small bowl, combine mayonnaise, mustard, vinegar, sugar, and onion powder. Pour this mixture over the potatoes and mix well to coat.
- Add the relish, chopped celery, onion, and eggs to the bowl with the potatoes. Mix everything together thoroughly. Season with salt and pepper to taste.
- Garnish the potato salad with the sliced egg and sprinkle with paprika.
- Cover the bowl with plastic wrap and refrigerate for at least 4 hours before serving.
