Southern-Style Crispy Catfish Recipe
Ingredients:
- 2 pounds fresh catfish fillets
- 1 1/2 cups yellow cornmeal
- 1 teaspoon all-purpose flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Accent
- 2 teaspoons Creole seasoning or seasoned salt
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon dry crab boil (optional)
- Canola oil for frying
Instructions:
- In a shallow dish, combine cornmeal, flour, and all the listed spices and seasonings. Mix thoroughly.
- Heat canola oil in a deep fryer or cast-iron skillet to approximately 350 degrees F.
- Dredge each catfish fillet in the cornmeal mixture, shaking off excess coating.
- Fry the catfish for 3-5 minutes per side (or until golden and crispy if deep-frying) to your desired level of crispiness.
