Smothered Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 6 slices of bacon, chopped
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Preparation:

  1. Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium heat. Cook the chicken until it is golden brown and fully cooked, approximately 6-8 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, cook the chopped bacon until it is crispy. Remove the bacon and drain it on paper towels.
  3. Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
  4. Reduce the heat to low and add the heavy cream and grated Parmesan cheese, stirring until the cheese melts and the sauce thickens.
  5. Stir in the fresh spinach and cook until it wilts.
  6. Add the garlic powder and onion powder, mixing well to combine.
  7. Return the chicken to the skillet, spooning the sauce over the top. Sprinkle the cooked bacon over the chicken and simmer for an additional 5 minutes.
