Smothered Chicken Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 6 slices of bacon, chopped
- 8 ounces mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Preparation:
- Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium heat. Cook the chicken until it is golden brown and fully cooked, approximately 6-8 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, cook the chopped bacon until it is crispy. Remove the bacon and drain it on paper towels.
- Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
- Reduce the heat to low and add the heavy cream and grated Parmesan cheese, stirring until the cheese melts and the sauce thickens.
- Stir in the fresh spinach and cook until it wilts.
- Add the garlic powder and onion powder, mixing well to combine.
- Return the chicken to the skillet, spooning the sauce over the top. Sprinkle the cooked bacon over the chicken and simmer for an additional 5 minutes.
