Scalloped Potatoes Recipe
Ingredients:
- 1/4 cup butter
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 pounds white potatoes, thinly sliced (about 1/8″ thick)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350˚F.
-
Prepare the Sauce:
- In a saucepan over medium-low heat, melt the butter, then sauté the diced onion and minced garlic until the onion is softened (approximately 3 minutes).
- Add the flour and cook for an additional 1-2 minutes.
- Reduce the heat to low. Gradually combine the milk and chicken broth, whisking continuously to avoid lumps. The mixture will thicken; keep adding liquid slowly until smooth.
- Once all the liquid is incorporated, bring the mixture to a boil over medium heat, whisking continuously. Stir in salt and pepper, allowing it to boil for 1 minute.
-
Assembly:
- Grease a 9″x13″ baking dish.
- Layer 1/3 of the sliced potatoes on the bottom, seasoning with salt and pepper. Pour 1/3 of the cream sauce over the potatoes.
- Repeat the layers, finishing with a top layer of cream sauce.
- Cover and bake for 45 minutes.
- Uncover and bake for an additional 35-45 minutes or until the top is golden brown and the potatoes are tender. Optionally, broil for 3-4 minutes for a golden top.
- Allow the dish to rest for 15 minutes before serving.
