Beef Stew Recipe

Savory Beef Stew

Ingredients:

  • 2 pounds beef chuck roast, cubed into 1-inch pieces
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 4 carrots, peeled and cut into chunks
  • 4 celery stalks, cut into chunks
  • 2 potatoes, peeled and cut into chunks

Instructions:

  1. Begin by seasoning the beef cubes generously with salt and pepper, then coat them lightly with flour.
  2. Heat vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides, approximately 8 minutes. Once browned, set aside the beef.
  3. In the same pot, add diced onions and sauté until softened, about 5 minutes. Add minced garlic and sauté for an additional minute.
  4. Pour in beef broth and red wine, then stir in tomato paste and dried thyme. Return the browned beef to the pot and bring the mixture to a simmer.
  5. Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour.
  6. After an hour, add carrots, celery, and potatoes to the pot, stirring to combine. Cover the pot again and continue simmering for another hour, or until the vegetables and beef are tender.
  7. Taste the stew and adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
