Savory Beef and Barley Soup 🍲
Slow Cooker Delight
Ingredients:
- 1 pound of trimmed and diced boneless chuck roast
- 1 1/2 cups of thinly sliced carrots
- 1 1/2 cups of finely sliced celery
- 2/3 cup of chopped onions
- 10-12 sliced mushrooms
- 2 tablespoons of beef base (a distinct ingredient for enhancing beef broth)
- 8-10 cups of water
- 1 or 2 large bay leaves
- 1 cup of uncooked pearl barley
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of minced garlic
Directions:
- Brown the beef in a skillet until it achieves a golden hue, stirring consistently.
- Transfer the browned beef to the crockpot, adding carrots, celery, onions, mushrooms, beef base, water, garlic, and bay leaves.
- Cook on high heat for 2 hours, then add pearl barley. Reduce heat to low and continue cooking until the vegetables and beef reach a tender perfection.
- Stir in salt and pepper.
