Savory Baked Cottage Cheese Eggs

Ingredients:

  • 6 large eggs
  • Approximately 450 grams (about 2 cups) of cottage cheese
  • 1 cup (about 100 grams) of grated sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup flour (about 30 grams)
  • 2 tablespoons (30 milliliters) melted butter
  • 1 teaspoon (about 5 milliliters) baking powder
  • 1/2 teaspoon (2.5 milliliters) salt
  • 1/4 cup chopped green onions
  • Fresh parsley for garnish
  • Optional: red pepper flakes for garnish

Instructions:

  1. Preheat the oven to 350°F (175℃). Lightly grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together the eggs until well combined. Add the cottage cheese, cheddar cheese, Parmesan cheese, flour, melted butter, baking powder, and salt. Mix until smooth and creamy.
  3. Stir in the chopped green onions.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 35 to 40 minutes, or until the center is set and the top is golden brown.
  6. Allow to cool slightly before slicing.
  7. Garnish with fresh parsley and, if desired, red pepper flakes.
  8. Serve warm and enjoy!
