Salted Nut Roll Bars
Ingredients:
- Crust:
- 2 cups of all-purpose flour
- 1 cup of packed light brown sugar
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- 1 large egg
- ½ cup of melted unsalted butter
- 1 teaspoon of vanilla extract
- Topping:
- 4 cups of miniature marshmallows
- 2-3 cups of salted peanuts
- 10 oz. bag of peanut butter chips
- ⅔ cup of light corn syrup
- 2 cups of Rice Krispies cereal
- ½ cup of unsalted butter
- Optional: Flakey sea salt
Instructions:
- Preheat the oven to 350°F (175°C).
- In a medium mixing bowl, thoroughly beat together all the crust ingredients until well combined. Press the mixture evenly into a 9×13 inch baking pan lined with parchment paper.
- Bake the crust for 12 minutes, until lightly golden.
- Remove the crust from the oven and immediately sprinkle the mini marshmallows over it. Return the baking dish to the oven and bake for an additional 12-15 minutes, until the marshmallows are puffed and lightly golden.
- Meanwhile, in a medium saucepan over medium heat, combine the peanut butter chips, corn syrup, and butter. Stir continuously until melted and smooth.
- Stir in the peanuts and Rice Krispies until evenly coated.
- Spread the topping mixture evenly over the puffed marshmallows in the baking dish. If desired, sprinkle with flakey sea salt for an extra touch of flavor.
- Allow the bars to cool completely in the baking dish.
- Once cooled, lift the bars from the baking dish using the parchment paper and cut into desired serving sizes.
