Salted Nut Roll Bars

Ingredients:

  • Crust:
    • 2 cups of all-purpose flour
    • 1 cup of packed light brown sugar
    • 1 teaspoon of baking powder
    • ½ teaspoon of baking soda
    • 1 large egg
    • ½ cup of melted unsalted butter
    • 1 teaspoon of vanilla extract
  • Topping:
    • 4 cups of miniature marshmallows
    • 2-3 cups of salted peanuts
    • 10 oz. bag of peanut butter chips
    • ⅔ cup of light corn syrup
    • 2 cups of Rice Krispies cereal
    • ½ cup of unsalted butter
    • Optional: Flakey sea salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium mixing bowl, thoroughly beat together all the crust ingredients until well combined. Press the mixture evenly into a 9×13 inch baking pan lined with parchment paper.
  3. Bake the crust for 12 minutes, until lightly golden.
  4. Remove the crust from the oven and immediately sprinkle the mini marshmallows over it. Return the baking dish to the oven and bake for an additional 12-15 minutes, until the marshmallows are puffed and lightly golden.
  5. Meanwhile, in a medium saucepan over medium heat, combine the peanut butter chips, corn syrup, and butter. Stir continuously until melted and smooth.
  6. Stir in the peanuts and Rice Krispies until evenly coated.
  7. Spread the topping mixture evenly over the puffed marshmallows in the baking dish. If desired, sprinkle with flakey sea salt for an extra touch of flavor.
  8. Allow the bars to cool completely in the baking dish.
  9. Once cooled, lift the bars from the baking dish using the parchment paper and cut into desired serving sizes.
