Ingredients:

  • 1 pre-made graham cracker pie crust
  • 1 package (8 oz.) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 can (14 oz.) Eagle Brand sweetened condensed milk
  • 1/3 cup fresh lemon juice
  • 1 can of your favorite pie filling (cherry, strawberry, or blueberry)

Instructions:

  1. In a mixing bowl, beat the cream cheese until it becomes light and fluffy.
  2. Add the sweetened condensed milk and blend thoroughly.
  3. Stir in the lemon juice and vanilla.
  4. Pour the mixture into the graham cracker pie crust.
  5. Cover and refrigerate for 2-3 hours or until firm (overnight chilling is also an option); avoid freezing. Remember to chill the pie filling simultaneously with the cheesecake.
  6. Prior to serving, top the cheesecake with the chilled pie filling.
