Pineapple Quick Bread Recipe
Ingredients:
- Salt: ⅛ tsp
- Butter (softened): ½ cup
- Crushed Pineapple (drained, liquid reserved): 1 cup
- Large Eggs: 2
- All-purpose Flour: 1 ½ cups
- Reserved Pineapple Liquid: ¼ cup
- Granulated Sugar: ¼ cup
- Milk: 2 tbsp
- Baking Powder: 2 tsp
For the Glaze:
- Reserved Pineapple Liquid: 2 tbsp
- Confectioners Sugar: 1 cup
- Vanilla Extract: 1 tsp
Preparation:
- Preheat the Oven: Set your oven to 350°F (175°C).
- Prepare Dry Ingredients: In a medium-sized bowl, sift together the all-purpose flour, salt, and baking powder for even distribution.
- Cream Butter and Sugar: In a separate bowl, beat the softened butter and granulated sugar until smooth and creamy.
- Add Eggs: Mix in the eggs thoroughly with the butter and sugar mixture.
- Combine Wet and Dry Ingredients: Gradually add the reserved ¼ cup of pineapple liquid and the sifted dry ingredients to the wet mixture, alternating between the two. Mix until well incorporated.
- Add Milk and Pineapple: Stir in the milk and then gently fold in the crushed pineapple.
- Transfer to Loaf Pan: Pour the batter into a greased loaf pan and spread it evenly.
- Bake: Bake in the preheated oven for about 50-55 minutes, or until a skewer inserted into the center of the bread comes out clean.
- Cool: Let the loaf cool in the pan for 10-15 minutes, then transfer it to a cooling rack to cool completely.
- Prepare the Glaze: In a small bowl, mix the reserved pineapple liquid, confectioners sugar, and vanilla extract until smooth.
- Glaze the Loaf: Drizzle the glaze over the fully cooled loaf. Allow the glaze to set before slicing and serving.
