Perfectly Roasted Chicken Drumsticks and Thighs
Ingredients:
- 2.6kg chicken drumsticks and thighs
- 4 tablespoons Greek yogurt
- 8 tablespoons olive oil
- 2 tablespoons garlic ginger paste
- 1½ tablespoons cumin powder
- 1½ tablespoons onion powder
- 1 tablespoon black pepper
- 2 tablespoons paprika
- 1½ tablespoons smoked paprika
- 1 tablespoon Kashmiri chili powder or regular chili powder, to taste
- Juice of half a lemon
- 2 tablespoons salt, or to taste
Directions:
- Begin by making three deep slits in each chicken piece.
- In a bowl, combine Greek yogurt, olive oil, garlic ginger paste, cumin powder, onion powder, black pepper, paprika, smoked paprika, Kashmiri chili powder, lemon juice, and salt to create the marinade.
- Ensure the chicken pieces are dry before adding them to the marinade.
- Coat the chicken pieces thoroughly with the marinade, then cover the bowl with cling film and refrigerate overnight.
- Preheat the oven to 200°C and prepare a roasting tray with a rack and foil on the bottom.
- Arrange the marinated chicken pieces on the prepared roasting tray.
- Roast the chicken in the preheated oven for 35 minutes, flipping them over and basting them halfway through the cooking time.
- After 35 minutes, flip the chicken pieces again, baste them, and broil them on full heat for an additional 5 minutes to achieve a crispy exterior.
- If your oven does not have a broil setting, continue roasting the chicken for an additional 10 minutes until fully cooked and golden brown.
- Serve the perfectly roasted chicken drumsticks and thighs hot and enjoy!
