Perfect Potato Pancakes Recipe
Ingredients:
- 4 cups of chilled mashed potatoes
- 5 slices of bacon
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 eggs, well beaten
- 1/2 cup of shredded cheddar cheese
Directions:
- In a large skillet, cook the bacon over medium-high heat until it’s evenly browned and crispy, which should take about 10 minutes. Remember to turn the slices occasionally.
- Once the bacon is cooked, remove it from the skillet and crumble it. Set aside, but keep the bacon drippings in the skillet.
- In a mixing bowl, combine the mashed potatoes, beaten eggs, onion powder, salt, and black pepper. Stir in the crumbled bacon and shredded cheddar cheese until well mixed.
- Shape the mixture into 8 evenly sized patties.
- Heat the bacon drippings in the skillet over medium heat. Pan-fry the potato patties in the drippings until they’re crisp and golden brown on each side, which usually takes about 4 minutes per side.
- Once cooked, serve and enjoy these delightful potato pancakes!
