Savory Delight: Oven-Roasted Smoked Sausage and Potatoes

As the oven timer chimed, announcing the completion of the dish, I eagerly retrieved the roasting pan, releasing an enticing aroma of smoked sausage and potatoes into the air. Anticipation built as I prepared to savor the culmination of flavors.

Ingredients:

  • 1 lb smoked turkey sausage, sliced into rounds
  • 1 large onion, peeled and chopped
  • 6 baby red potatoes
  • 6 baby golden potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun spice

Instructions:

  1. Preheat the oven to 400°F.
  2. Line a spacious baking sheet with tin foil and generously spray it with cooking spray. Set it aside.
  3. Cut the smoked turkey sausage into substantial chunks.
  4. Chop the onions into large pieces.
  5. Wash and pat dry the baby potatoes, cutting them in half.
  6. In a sizable bowl, combine the sausage, onions, and baby potatoes.
  7. Drizzle olive oil over the sausage mixture and toss to ensure an even coating.
  8. In a small bowl, blend all the spices thoroughly.
  9. Sprinkle the seasoning mixture over the sausage blend and toss again to coat evenly.
  10. Transfer the mixture onto the prepared sheet pan, spreading the sausage and potatoes evenly.
  11. Place the pan in the preheated oven and roast for 55 minutes.
  12. Check the potatoes’ tenderness by inserting a fork; if not fully cooked, continue baking for an additional 5 minutes.
