Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 2 teaspoons chopped fresh parsley
  • ½ teaspoon McCormick Season All seasoning
  • 3 cups shredded Colby Jack cheese
  • 6 bacon strips, fried until crisp and halved
  • Cooking oil, as needed

For the Sauce:

  • ½ cup prepared mustard
  • ¼ cup light corn syrup
  • ¼ cup honey
  • ¼ cup mayonnaise

Instructions:

  1. Season the Chicken: Rub the McCormick Season All seasoning over the chicken breasts and refrigerate for an hour.
  2. Prepare the Bacon: While the chicken is marinating, fry the bacon until crispy and set aside, discarding the grease.
  3. Cook the Chicken: Heat a small amount of oil in a cast iron skillet. Pan-fry the chicken breasts until they are just cooked through and slightly golden.
  4. Preheat the Oven: Set your oven to 350°F (175°C).
  5. Assemble the Dish: Place the cooked chicken breasts on a baking sheet. Top each piece with mushrooms, bacon strips, and a generous amount of shredded Colby Jack cheese.
  6. Bake: Bake in the preheated oven until the cheese has melted, about 5-7 minutes.
  7. Garnish and Serve: Remove from the oven, sprinkle with chopped fresh parsley, and serve with the honey mustard sauce on the side.
