Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 2 teaspoons chopped fresh parsley
- ½ teaspoon McCormick Season All seasoning
- 3 cups shredded Colby Jack cheese
- 6 bacon strips, fried until crisp and halved
- Cooking oil, as needed
For the Sauce:
- ½ cup prepared mustard
- ¼ cup light corn syrup
- ¼ cup honey
- ¼ cup mayonnaise
Instructions:
- Season the Chicken: Rub the McCormick Season All seasoning over the chicken breasts and refrigerate for an hour.
- Prepare the Bacon: While the chicken is marinating, fry the bacon until crispy and set aside, discarding the grease.
- Cook the Chicken: Heat a small amount of oil in a cast iron skillet. Pan-fry the chicken breasts until they are just cooked through and slightly golden.
- Preheat the Oven: Set your oven to 350°F (175°C).
- Assemble the Dish: Place the cooked chicken breasts on a baking sheet. Top each piece with mushrooms, bacon strips, and a generous amount of shredded Colby Jack cheese.
