No-Bake Mango Cheesecake Recipe
Ingredients
For the Crust:
- 1 cup of cookies (200 g, gluten-free if preferred)
- 120 g melted vegan butter
For the Mango Cheesecake Filling:
- 250 g chilled mango, pureed
- 250 g vegan cream cheese (such as Alpro Skyr or Quark soya)
- 75 g sugar (preferred type)
- 200 ml chilled coconut cream
- 1 packet Agar-Agar (sufficient for 500 ml)
For the Topping:
- Nuts of choice
- 2-5 tablespoons of water
- 1 tablespoon cornstarch mixed with 4 tablespoons fruit juice (or approximately 4 ounces fruit puree)
Preparation
Prepare the Crust:
- Line the bottom of an 8-inch springform pan with parchment paper.
- Crush the cookies into fine crumbs using a food processor or by placing them in a sealed bag and using a rolling pin.
- Combine the cookie crumbs with the melted vegan butter, mixing well.
- Press the mixture firmly into the bottom of the prepared pan.
- Refrigerate or freeze for at least 15 minutes to set.
Prepare the Cheesecake Filling:
- Blend the mango puree, vegan cream cheese, and sugar until smooth and creamy.
- In a separate bowl, whip the chilled coconut cream until stiff peaks form.
- In a small saucepan, combine the Agar-Agar with the coconut milk, bringing to a boil and cooking for 2 minutes.
- Stir a few spoonfuls of the mango mixture into the Agar-Agar mixture to temper it, then fold this back into the remaining mango mixture until well combined.
- Gently fold the whipped coconut cream into the mixture.
- Pour the filling over the chilled crust, smoothing the top.
- Refrigerate for at least 4 hours or overnight until set.
Prepare the Topping:
- Soak the cornstarch mixture in water, then heat on the stove until thickened.
- Let the mixture cool slightly before spreading it over the cheesecake.
- Decorate with nuts and fresh fruit or shredded coconut as desired.
Serving:
- Once set, carefully remove the cheesecake from the springform pan.
- Top with passion fruit pulp or your choice of fresh fruit.
