No-Bake Mango Cheesecake Recipe

Ingredients

For the Crust:

  • 1 cup of cookies (200 g, gluten-free if preferred)
  • 120 g melted vegan butter

For the Mango Cheesecake Filling:

  • 250 g chilled mango, pureed
  • 250 g vegan cream cheese (such as Alpro Skyr or Quark soya)
  • 75 g sugar (preferred type)
  • 200 ml chilled coconut cream
  • 1 packet Agar-Agar (sufficient for 500 ml)

For the Topping:

  • Nuts of choice
  • 2-5 tablespoons of water
  • 1 tablespoon cornstarch mixed with 4 tablespoons fruit juice (or approximately 4 ounces fruit puree)

Preparation

Prepare the Crust:

  1. Line the bottom of an 8-inch springform pan with parchment paper.
  2. Crush the cookies into fine crumbs using a food processor or by placing them in a sealed bag and using a rolling pin.
  3. Combine the cookie crumbs with the melted vegan butter, mixing well.
  4. Press the mixture firmly into the bottom of the prepared pan.
  5. Refrigerate or freeze for at least 15 minutes to set.

Prepare the Cheesecake Filling:

  1. Blend the mango puree, vegan cream cheese, and sugar until smooth and creamy.
  2. In a separate bowl, whip the chilled coconut cream until stiff peaks form.
  3. In a small saucepan, combine the Agar-Agar with the coconut milk, bringing to a boil and cooking for 2 minutes.
  4. Stir a few spoonfuls of the mango mixture into the Agar-Agar mixture to temper it, then fold this back into the remaining mango mixture until well combined.
  5. Gently fold the whipped coconut cream into the mixture.
  6. Pour the filling over the chilled crust, smoothing the top.
  7. Refrigerate for at least 4 hours or overnight until set.

Prepare the Topping:

  1. Soak the cornstarch mixture in water, then heat on the stove until thickened.
  2. Let the mixture cool slightly before spreading it over the cheesecake.
  3. Decorate with nuts and fresh fruit or shredded coconut as desired.

Serving:

  1. Once set, carefully remove the cheesecake from the springform pan.
  2. Top with passion fruit pulp or your choice of fresh fruit.
  3. Serve and enjoy this refreshing, fruity, and creamy dessert that will add a delightful touch to your table!
