No Bake Cream Cheese Peanut Butter Pie

Ingredients:

Crust:

  • 1 1/4 cup salted pretzels
  • 6 tablespoons unsalted butter
  • 1/4 cup brown sugar

Filling:

  • 1/2 cup cream cheese, softened
  • 1/3 cup smooth peanut butter
  • 1/4 cup brown sugar
  • 1/2 cup 35% whipping cream, whipped

Chocolate Whip Cream:

  • 3/4 cup coarsely chopped dark chocolate
  • 2 cups 35% whip cream
  • Chocolate shavings (optional)

Instructions:

  1. Prepare the Crust:

    • Pulse the pretzels in a food processor until finely ground.
    • Mix pretzel crumbs with brown sugar and melted butter in a large bowl until well combined.
    • Press the mixture into the bottom and up the sides of a pie plate.
    • Chill in the fridge while preparing the filling.
  2. Make the Filling:

    • In a bowl, blend together cream cheese, peanut butter, and brown sugar until smooth.
    • Fold in the whipped cream until fully incorporated.
    • Spread the filling evenly over the chilled crust.
  3. Prepare the Chocolate Whip Cream:

    • In a double boiler over medium heat, melt the dark chocolate with a portion of the whipped cream until smooth.
    • Chill the mixture until cold.
    • Once chilled, beat the chocolate mixture with a mixer until thick and spreadable.
  4. Assemble the Pie:

    • Spread the chocolate whipped cream over the chilled filling.
    • Optionally, garnish with chocolate shavings.
  5. Chill and Serve:

    • Cover the pie and refrigerate until set.
    • Serve chilled and enjoy this decadent no-bake treat!
