Mississippi Mud Cake
Ingredients
For the Cake:
- 2 cups flour
- 1 ½ cups granulated sugar
- ½ cup brown sugar
- Pinch of salt
- 2 eggs
- 1 tablespoon baking soda
- 1 tablespoon baking powder
- ½ cup cocoa powder
- ½ cup oil (canola or vegetable oil)
- 1 teaspoon vanilla essence
- 1 cup boiling water
- 6 tablespoons milk
- 3 tablespoons sour cream
For the Topping:
- 1 pack mini marshmallows
- 1 cup butter
- 6 tablespoons milk
- 2 tablespoons cocoa powder
- 3 cups powdered sugar
- 1 teaspoon vanilla essence

Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease a baking pan adequately.

Mix Dry Ingredients:
In a large bowl, combine the flour, granulated sugar, brown sugar, salt, baking soda, baking powder, and cocoa powder. Mix well.

Combine Wet Ingredients:
In a separate bowl, beat the eggs, oil, and vanilla essence at high speed. Gradually add the dry ingredient mixture to the wet ingredients. Pour in the boiling water, milk, and sour cream. Mix until smooth.

Bake the Cake:
Pour the batter into the prepared baking pan. Bake for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

Add Marshmallow Topping:
Remove the cake from the oven and immediately cover the top with mini marshmallows. Return the cake to the oven for an additional 2-3 minutes, allowing the marshmallows to melt slightly.

Prepare the Frosting:
In a saucepan, melt the butter over medium heat. Stir in the milk and cocoa powder, whisking continuously until well combined. Transfer the mixture to an electric mixer, add the powdered sugar and vanilla essence, and mix until smooth.

Finish and Serve:
Let the frosting cool slightly, then spread it over the marshmallow-topped cake. Allow the cake to cool completely or serve warm as desired.
