Ingredients

  • 4 cups of thinly sliced and peeled potatoes
  • 2 tablespoons of melted butter
  • 1/2 teaspoon of salt
  • 1 pound of ground beef
  • 10 ounces of frozen corn
  • 10-3/4 ounces of condensed cream of celery soup (undiluted)
  • 1/3 cup of 2% milk
  • 1/4 teaspoon of garlic powder
  • 1/8 teaspoon of pepper
  • 1 tablespoon of chopped onion
  • 1 cup of shredded Cheddar cheese (reserve half for topping)
  • Fresh parsley, minced (optional, for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Prepare the Potatoes: In a mixing bowl, toss the sliced potatoes with the melted butter and salt. Arrange this mixture evenly at the base and sides of a 13×9 inch baking dish. Bake for 25-30 minutes, or until the potatoes are almost tender.
  3. Cook the Beef: While the potatoes are baking, brown the ground beef in a skillet over medium heat. Once fully cooked, drain the excess fat. Spread the cooked beef and frozen corn evenly over the baked potatoes.
  4. Make the Sauce: In a separate bowl, combine the condensed cream of celery soup, milk, garlic powder, pepper, chopped onion, and half of the shredded Cheddar cheese. Pour this mixture evenly over the beef layer.
  5. Bake the Casserole: Return the dish to the oven and bake, uncovered, for an additional 20 minutes, or until the casserole is heated through and the vegetables are tender.
  6. Add the Final Touches: Sprinkle the remaining shredded cheese on top and bake for another 2-3 minutes, until the cheese is melted and golden. Garnish with minced parsley if desired.
