Meat and Potato Casserole
Ingredients
- 4 cups of thinly sliced and peeled potatoes
- 2 tablespoons of melted butter
- 1/2 teaspoon of salt
- 1 pound of ground beef
- 10 ounces of frozen corn
- 10-3/4 ounces of condensed cream of celery soup (undiluted)
- 1/3 cup of 2% milk
- 1/4 teaspoon of garlic powder
- 1/8 teaspoon of pepper
- 1 tablespoon of chopped onion
- 1 cup of shredded Cheddar cheese (reserve half for topping)
- Fresh parsley, minced (optional, for garnish)
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C).
- Prepare the Potatoes: In a mixing bowl, toss the sliced potatoes with the melted butter and salt. Arrange this mixture evenly at the base and sides of a 13×9 inch baking dish. Bake for 25-30 minutes, or until the potatoes are almost tender.
- Cook the Beef: While the potatoes are baking, brown the ground beef in a skillet over medium heat. Once fully cooked, drain the excess fat. Spread the cooked beef and frozen corn evenly over the baked potatoes.
- Make the Sauce: In a separate bowl, combine the condensed cream of celery soup, milk, garlic powder, pepper, chopped onion, and half of the shredded Cheddar cheese. Pour this mixture evenly over the beef layer.
- Bake the Casserole: Return the dish to the oven and bake, uncovered, for an additional 20 minutes, or until the casserole is heated through and the vegetables are tender.
- Add the Final Touches: Sprinkle the remaining shredded cheese on top and bake for another 2-3 minutes, until the cheese is melted and golden. Garnish with minced parsley if desired.
