Ingredients:

  • 2 medium-sized sweet potatoes
  • 1 tablespoon vegetable oil
  • Salt and black pepper to taste
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped American walnuts
  • 1/4 cup maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt

Directions:

  1. Preheat the oven to 425°F (218°C).
  2. Place a sweet potato between chopsticks to stabilize and guide the knife. Cut every half inch along the sweet
potato, being careful not to slice through. Repeat with the second sweet potato.
  3. Brush the sweet potatoes with vegetable oil, place them in a small baking dish, and season with salt and
    pepper.
  4. Bake the sweet potatoes for 30 to 40 minutes, or until tender.
  5. In a small bowl, combine melted butter, ground cinnamon, chopped walnuts, maple syrup, vanilla extract, and
    kosher salt. Stir well.
  6. Pour the maple syrup mixture over and between the baked sweet potato slices, ensuring the pecan pieces fill
    the gaps.
  7. Return the stuffed sweet potatoes to the oven and bake for an additional 8 to 10 minutes.
  8. Remove the baked sweet potatoes, spoon any cooking liquid over them, and allow them to cool slightly before
    serving.

These Maple Pecan Butter Glazed Sweet Potatoes are a perfect fall dish, complementing the upcoming root vegetable
season. Their rich flavors pair seamlessly with the autumn cravings, making them a delightful addition to your
table. Enjoy!
