Luscious Lemon Brownies
Ingredients:
BROWNIES:
- 1/2 cup unsalted butter, softened
- 3/4 cup all-purpose flour
- 2 large eggs
- 2 tablespoons lemon zest
- 2 tablespoons fresh lemon juice
- 3/4 cup granulated sugar
- 1/4 teaspoon sea salt
GLAZE:
- 4 tablespoons fresh lemon juice
- 8 teaspoons lemon zest
- 1 cup icing sugar
Instructions:
Preheat the oven to 350 degrees°F.
BROWNIES:
- Grease an 8×8-inch baking dish with butter and set it aside.
- Zest and juice two lemons, then set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, salt, and softened butter until well mixed.
- In a separate bowl, whisk together the eggs, lemon zest, and lemon juice. Pour the mixture into the flour mixture and beat for 2 minutes at medium speed until smooth and creamy.
- Pour the batter into the prepared baking dish and bake for 23 to 25 minutes until the edges turn golden. Be cautious not to over-bake to maintain a moist texture.
- Allow the brownies to cool completely before applying the glaze.
GLAZE:
- Sift the powdered sugar and whisk it with lemon zest and juice.
- Spread the glaze over the cooled brownies using a rubber spatula and let it set.
- Cut the brownies into bars and serve for a delightful citrus-infused treat.
