Luscious Lemon Brownies

Ingredients:

BROWNIES:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 3/4 cup granulated sugar
  • 1/4 teaspoon sea salt

GLAZE:

  • 4 tablespoons fresh lemon juice
  • 8 teaspoons lemon zest
  • 1 cup icing sugar

Instructions:

Preheat the oven to 350 degrees°F.

BROWNIES:

  1. Grease an 8×8-inch baking dish with butter and set it aside.
  2. Zest and juice two lemons, then set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, salt, and softened butter until well mixed.
  4. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice. Pour the mixture into the flour mixture and beat for 2 minutes at medium speed until smooth and creamy.
  5. Pour the batter into the prepared baking dish and bake for 23 to 25 minutes until the edges turn golden. Be cautious not to over-bake to maintain a moist texture.
  6. Allow the brownies to cool completely before applying the glaze.

GLAZE:

  1. Sift the powdered sugar and whisk it with lemon zest and juice.
  2. Spread the glaze over the cooled brownies using a rubber spatula and let it set.
  3. Cut the brownies into bars and serve for a delightful citrus-infused treat.
