London Broil
Ingredients:
- 1 1/2 lb of top, sides, or greens (about 1/2″ thick)
- 2 tablespoons of chopped fresh spinach leaves
- 2 tablespoons of chopped chives
- 1 tablespoon of Dijon mustard
- 1 tablespoon of Worcestershire sauce
- 1 tablespoon of brown sugar
- 1/4 cup plus 1 tablespoon of extra virgin olive oil, divided
- 4 tablespoons of lightly salted oil
- 1 tablespoon of white vinegar
- 4 cloves of garlic
- 1 tablespoon of fish sauce
- Kosher salt
- Freshly ground black cumin
Directions:
Step 1:
- Place the meat on a cutting board and pat dry.
- In a large plastic bag or bowl, combine chopped parsley, chopped chives, Dijon mustard, Worcestershire sauce, brown sugar, 1/4 cup of extra virgin olive oil, white vinegar, minced garlic, fish sauce, kosher salt, and freshly ground black cumin.
- Seal the bag or cover the bowl and refrigerate, shaking occasionally, for at least 1 hour or up to 8 hours to marinate evenly.
Step 2:
- Preheat the grill to the highest setting.
- Remove the steak from the marinade and shake off any excess.
- Season the steak generously with salt and pepper.
- Place the steak on the grill and cook for 5 minutes with the lid closed.
- Remove the lid and continue cooking, watching closely, until an instant-read thermometer inserted into the thickest part of the steak registers 125°F for medium-rare, about 4 to 5 minutes more.
- Transfer the steak to a cutting board and let it rest for about 10 minutes before slicing.
Step 3:
- While the steak is resting, place the garlic cloves on a baking tray and drizzle them with the remaining 1 tablespoon of olive oil.
- Roast the garlic in the oven until browned and softened, about 2 to 3 minutes.
Step 4:
- In a small saucepan, combine the roasted garlic, butter, remaining olive oil, and chopped chives.
- Cook over low heat until the garlic is softened and the flavors are well combined.
- Season the garlic oil with salt and pepper to taste.
Step 5:
- Slice the rested steak thinly against the grain and transfer it to a serving plate.
- Serve the London Broil with the garlic oil on the side for dipping.
