Loaded Baked Potato & Chicken Casserole
Ingredients:
- 1 kg chicken breast
- 8 potatoes
- 1/3 cup olive oil
- 1 1/2 teaspoons salt
- 1 tablespoon fresh ground pepper
- 1 tablespoon paprika
- 2 tablespoons garlic powder
- 6 tablespoons hot sauce
Toppings:
- 2 cups grated cheese
- 1 cup crumbled bacon
- 1 cup diced green onion
Instructions:
- Preheat the oven to 500°F.
- In a large bowl, combine olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
- Cut the potatoes into cubes and add them to the bowl. Toss to coat evenly.
- Spray a 9×13 dish with cooking spray and add the potatoes, leaving excess sauce in the bowl.
- Bake the potatoes for 45 minutes, stirring every 15 minutes.
- Cut the chicken into cubes and add it to the bowl with the remaining sauce, ensuring it’s well coated.
- In a separate small bowl, mix cheese, bacon, and green onion.
- Once the potatoes are cooked, add the marinated chicken on top.
- Sprinkle the cheese mixture evenly over the chicken.
- Bake for 15 minutes or until the chicken is cooked through.
