Loaded Baked Potato & Chicken Casserole

Ingredients:

  • 1 kg chicken breast
  • 8 potatoes
  • 1/3 cup olive oil
  • 1 1/2 teaspoons salt
  • 1 tablespoon fresh ground pepper
  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 6 tablespoons hot sauce

Toppings:

  • 2 cups grated cheese
  • 1 cup crumbled bacon
  • 1 cup diced green onion

Instructions:

  1. Preheat the oven to 500°F.
  2. In a large bowl, combine olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
  3. Cut the potatoes into cubes and add them to the bowl. Toss to coat evenly.
  4. Spray a 9×13 dish with cooking spray and add the potatoes, leaving excess sauce in the bowl.
  5. Bake the potatoes for 45 minutes, stirring every 15 minutes.
  6. Cut the chicken into cubes and add it to the bowl with the remaining sauce, ensuring it’s well coated.
  7. In a separate small bowl, mix cheese, bacon, and green onion.
  8. Once the potatoes are cooked, add the marinated chicken on top.
  9. Sprinkle the cheese mixture evenly over the chicken.
  10. Bake for 15 minutes or until the chicken is cooked through.
