Lemon Pepper Smoke Wings
Ingredients:
- 2 to 3 pounds chicken wings
- 1/4 cup olive oil
- Zest of 2 lemons
- Juice of 2 lemons
- 3 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 tablespoon fresh parsley, chopped (for garnish)
For the Lemon Pepper Glaze:
- 1/4 cup unsalted butter
- 2 tablespoons honey
- 1 teaspoon lemon pepper seasoning
- 1 tablespoon lemon juice
- Salt to taste
Directions:
- Marinate the Wings: In a large bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, black pepper, smoked paprika, onion powder, and salt. Add the chicken wings to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours or preferably overnight for maximum flavor.
- Prepare the Smoker: Preheat your smoker to 225°F (107°C). Use your choice of wood chips or chunks for smoking. Apple or hickory wood works well with chicken.
- Smoke the Wings: Place the marinated wings on the smoker grates and smoke for approximately 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C).
- Make the Lemon Pepper Glaze: In a small saucepan, melt the butter over medium heat. Add honey, lemon pepper seasoning, lemon juice, and a pinch of salt. Simmer the glaze for about 5 minutes, stirring occasionally, until it thickens slightly. Adjust the seasoning to taste.
- Finish the Wings: Once the wings are smoked, transfer them to a bowl. Pour the lemon pepper glaze over the wings and toss until they are evenly coated.
- Serve: Arrange the smoked wings on a platter, sprinkle with fresh chopped parsley for garnish, and serve immediately.
- Optional: Grill for Crispiness (Optional): For added crispiness, you can finish the wings on a hot grill for 2-3 minutes per side after smoking and glazing.
- Enjoy: Serve your lemon pepper smoked wings hot and enjoy the smoky, citrusy flavor! These wings are perfect for gatherings, game day, or any time you want to enjoy delicious and smoky chicken wings with a zesty kick. Adjust the spice levels and lemon intensity to suit your taste.
