Lemon Loaf Recipe
Ingredients:
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 cup of granulated sugar
- 2 large eggs
- 1/3 cup of vegetable oil
- 1/4 cup of lemon juice
- 1 tablespoon of lemon zest
- 1/2 cup of milk
- 1/2 teaspoon of vanilla extract
Lemon Glaze:
- 1 cup of confectioners’ sugar
- 2 tablespoons of lemon juice
- 1 tablespoon of lemon zest
Instructions:
1. Preheat your oven to 350°F (180°C) and grease and flour a 9×5-inch loaf pan.
2. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
3. In a separate large mixing bowl, beat together the sugar, eggs, vegetable oil, lemon juice, and lemon zest until thoroughly combined.
4. Gradually add the dry ingredients to the wet ingredients in two additions, alternating with the milk and vanilla extract. Mix until just incorporated.
5. Pour the batter into the prepared loaf pan, smoothing the top, and gently tap the pan on the counter to release any air bubbles.
6. Bake the loaf for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
7. To prepare the lemon glaze, whisk together the confectioners’ sugar, lemon juice, and lemon zest until smooth. Drizzle the glaze over the cooled loaf, allowing it to drip down the sides.
8. Serve the lemon loaf at room temperature, sliced and ready to enjoy!
