Lemon & Garlic Chicken Bites

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic
  • Juice of ½ medium lemon (about 2 tablespoons)

Preparation

  1. In a small bowl, mix together the oregano, basil, parsley, salt, and pepper. Sprinkle the seasoning mixture evenly over all sides of the chicken pieces. Drizzle with olive oil and toss to coat thoroughly.
  2. In a 12-inch skillet over medium heat, melt 2 tablespoons of the butter, tilting the pan to evenly coat the bottom.
  3. Add the chicken to the skillet in a single layer, ensuring the pieces are not crowded. Cook for 8-10 minutes, turning halfway through, until the chicken is golden brown and mostly cooked through.
  4. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for an additional minute, or until fragrant and the chicken is fully cooked to an internal temperature of 165°F.
  5. Drizzle the lemon juice over the chicken and stir to combine.
  6. Serve and enjoy!
