Lemon Blueberry Bread 😋🍞🍞
Ingredients:
- 1 ½ cups plus 1 tbsp all-purpose flour
- 2 tsp baking powder
- 3 large eggs
- 1 cup granulated sugar
- 1 cup plain yogurt or sour cream
- ½ tsp salt
- ½ tsp vanilla extract
- ½ cup vegetable oil
- 2 tsp lemon zest
- 1 ½ cups fresh or frozen blueberries
Lemon Glaze/Syrup:
- 2 to 3 tbsp lemon juice
- 1 cup sifted confectioner’s sugar
Instructions:
Step 1: Preparing the Oven
- Preheat the oven to 350°F (175°C).
- Grease the sides and bottom of a loaf pan.
Step 2: Mixing Dry Ingredients
- Sift together all-purpose flour and baking powder in a bowl.
Step 3: Mixing Wet Ingredients
- In a large bowl, whisk together eggs, granulated sugar, plain yogurt or sour cream, salt, vanilla extract, vegetable oil, and lemon zest until well combined.
Step 4: Combining Dry and Wet Ingredients
- Slowly add the dry ingredients mixture to the wet ingredients mixture, stirring until just combined.
- In a separate bowl, toss blueberries with 1 tbsp of flour, then gently fold them into the batter.
Step 5: Baking
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cooling
- Remove from the oven and let cool in the pan for 10 minutes.
- Remove the loaf from the pan and allow it to cool completely on a wire rack.
Step 7: Making the Lemon Glaze
- In a small saucepan over low heat, combine lemon juice and sifted confectioner’s sugar, stirring until the sugar dissolves. Simmer for 3 minutes.
- Using a toothpick, poke holes all over the loaf, top, and sides.
Step 8: Glazing the Bread
- Use a pastry brush to brush the lemon syrup over the top and sides of the bread.
- Allow the glaze to harden for 15 minutes before serving.
