Lemon Blueberry Bread

Lemon Blueberry Bread 😋🍞🍞

Ingredients:

  • 1 ½ cups plus 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp salt
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

Lemon Glaze/Syrup:

  • 2 to 3 tbsp lemon juice
  • 1 cup sifted confectioner’s sugar

Instructions:

Step 1: Preparing the Oven

  1. Preheat the oven to 350°F (175°C).
  2. Grease the sides and bottom of a loaf pan.

Step 2: Mixing Dry Ingredients

  1. Sift together all-purpose flour and baking powder in a bowl.

Step 3: Mixing Wet Ingredients

  1. In a large bowl, whisk together eggs, granulated sugar, plain yogurt or sour cream, salt, vanilla extract, vegetable oil, and lemon zest until well combined.

Step 4: Combining Dry and Wet Ingredients

  1. Slowly add the dry ingredients mixture to the wet ingredients mixture, stirring until just combined.
  2. In a separate bowl, toss blueberries with 1 tbsp of flour, then gently fold them into the batter.

Step 5: Baking

  1. Pour the batter into the prepared loaf pan.
  2. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cooling

  1. Remove from the oven and let cool in the pan for 10 minutes.
  2. Remove the loaf from the pan and allow it to cool completely on a wire rack.

Step 7: Making the Lemon Glaze

  1. In a small saucepan over low heat, combine lemon juice and sifted confectioner’s sugar, stirring until the sugar dissolves. Simmer for 3 minutes.
  2. Using a toothpick, poke holes all over the loaf, top, and sides.

Step 8: Glazing the Bread

  1. Use a pastry brush to brush the lemon syrup over the top and sides of the bread.
  2. Allow the glaze to harden for 15 minutes before serving.
