Jerk Lemon Pepper Salmon
Ingredients:
- 1 or 2 pieces of Salmon (about 1 ½ lbs)
- 2 T Butter
- 1 T Peanut or Canola Oil only
- 1 lemon sliced
- Roasted vegetables (See recipe under ‘Vegetables’)
- 2 T Jerk Seasonings (blend)
- 1 T Salt
- 1 T Black Pepper
- ½ T Chile Powder
- ¼ T Red Pepper Flakes
- ¼ T Paisley
- 2 tsp Paprika
- 1 T Thyme
- 1 T Cinnamon
- ½ Nutmeg
- ½ All Spice
- 1 T Brown Sugar
- Lemon Pepper Seasoning:
- 1 T Salt
- 1 T Cracked Black Pepper
- 1 T Lemon Zest
Directions:
- Heat skillet to medium. Add butter and Peanut or Canola oil.
- Rinse salmon, pat dry. Drizzle oil over. Season all sides with Jerk and Lemon Pepper seasonings.
- When the butter is melted, beginning to brown, and the pan is slightly smoking, gently add salmon. Sear for 2-3 mins. Salmon should be slightly charred after flipping.
- Next, place Salmon and sliced lemons in a lightly greased oven-safe dish. Broil on high in the center rack for 8-10 mins until cooked through. Splash with lemon juice immediately once removed.
- Serve with roasted veggies.

Personal Notes: PRO TIP: This method is called pan-searing. Make sure your butter begins to brown before adding Salmon. This will give the salmon that charred seasoned coating.
