Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup honey
  • 2 large eggs
  • 1 cup buttermilk
  • 2 jalapeño peppers, finely chopped (seeds removed for less heat)
  • 1/2 cup shredded cheddar cheese (optional)

Directions:

  1. Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish and set it aside.
  2. In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, whisk together melted butter, honey, eggs, and buttermilk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the finely chopped jalapeño peppers and shredded cheddar cheese (if using).
  6. Pour the cornbread batter into the prepared baking dish.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cornbread to cool for a few minutes before slicing and serving.
