Ingredients:

  • 2 cups rolled oats, ground into flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup olive oil or melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1 cup grated apple (about 1 large apple)
  • 1/2 cup raisins or chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and set aside.
  2. In a large bowl, combine the ground oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the eggs, oil, honey, and vanilla until thoroughly combined.
  4. Stir the grated carrots and apple into the wet mixture. Add raisins or nuts if desired.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just blended.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
