Ingredients:

  • 1 box of yellow cake mix
  • 1 box of instant lemon pudding
  • ⅔ cup of oil
  • 3 eggs
  • ⅔ cup of water
  • 1 tsp of vanilla extract
  • 1 tsp of lemon zest

Glaze:

  • 2 cups of powdered sugar
  • 2 tbsp of unsalted butter, melted
  • 2 tbsp of heavy whipping cream
  • ¼ cup of freshly squeezed lemon juice
  • Pinch of lemon zest

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, instant lemon pudding, oil, water, eggs, vanilla extract, and lemon zest. Mix until just combined.
  3. Spread the batter evenly into the prepared baking pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool slightly on a wire rack.
  5. Meanwhile, in another mixing bowl, prepare the glaze by combining the powdered sugar, lemon zest, half of the lemon juice, whipping cream, and melted butter. Adjust the consistency by adding more lemon juice until desired thickness is reached.
  6. Pour the glaze over the still warm cake, spreading it evenly.
  7. Allow the glaze to harden slightly before serving.
