Ingredients:

Wet:

  • 2 grated carrots
  • 2 eggs
  • 1/2 cup brown sugar
  • 100 ml olive oil
  • A pinch of vanilla extract

Dry:

  • 1 cup almond or oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup walnuts

Cover:

  • 100g white chocolate
  • 50g walnuts and almonds

Instructions:

  1. Start by blending eggs, grated carrots, and brown sugar until frothy. Gradually incorporate olive oil and vanilla extract into the mixture.
  2. Transfer the blended mixture into a bowl and slowly fold in the dry ingredients, sifted almond or oat flour, baking powder, and baking soda using a spatula.
  3. Finally, add in the walnuts and any additional desired seasonings.
  4. Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit) and bake for approximately 35 minutes.
  5. Once the cake has cooled, adorn it with a decadent topping: melt white chocolate and drizzle it over the cake, then sprinkle with a mix of chopped walnuts and almonds for added crunch and flavor.
