Ingredients

For the Sponge Cake:

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder

  • 4 eggs

  • 2 tablespoons butter, melted

  • 1/4 cup (25g) cocoa powder
  • 1 1/2 cups (180g) icing sugar
  • 3 tablespoons boiling water (adjust as needed)
  • 1/2 teaspoon butter, melted

Additional:

  • 2 cups (200g) desiccated coconut for coating

Instructions

Preheat the Oven and Prepare the Pan:

  1. Preheat your oven to 180°C (350°F). Grease and flour an 8-inch square cake pan or line it with parchment paper.

Make the Sponge Cake:

  1. Sift the flour, baking powder, and salt together. Set aside.
  2. In a large bowl, beat the eggs, granulated sugar, and vanilla extract until the mixture is light, fluffy, and almost doubled in volume (approximately 5-10 minutes).
