Homemade Krispy Kreme-Style Doughnuts

Ingredients:

  • 3 tablespoons milk
  • 3 tsp boiling water
  • 1 tsp dry yeast
  • 8 oz flour (just under 2 cups, measured and weighed)
  • 1 1/2 oz sugar
  • 1 egg
  • 1 oz butter, at room temperature
  • 1 pinch salt
  • Oil for frying

Glaze:

  • 1/3 cup butter
  • 2 cups confectioners’ sugar
  • 1 1/2 tsp vanilla
  • 4 tsp warm water

Instructions:

  1. In a measuring jug, mix milk and boiling water. Add a teaspoon of sugar and yeast. Gently stir and leave it in a warm place until the yeast activates.
  2. In a bowl, mix flour, remaining sugar, and salt. Cut the butter in with your hands or using a pastry blender until it resembles crumbs. Add eggs (and beat quickly) and the yeast mixture to the flour mixture, and mix until smooth (about 5 minutes).
  3. Turn the dough onto a lightly floured counter and knead for 5 to 10 minutes until you feel a spring and small bubbles form beneath the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let it rise for about an hour until it doubles in size.
  4. Once risen, place the dough on the counter and cut into four pieces. Shape each piece into a long rope (about an inch to an inch and a half wide). Cut strips about 2.5 cm long, lift the ball with your hands, and place it on a baking tray or wire rack to wait.
  5. Cover the holes with a cloth so they rise while the oil is heating to 375 degrees F.
  6. Place the buns in the oil and fry until golden brown on each side, for about 2 minutes. Fry a few at a time to avoid crowding.
  7. Drain on a paper towel or wire rack on a cloth before glazing. Make sure to glaze them while they’re warm for that delicious coating!
