Homemade Chicken Polony Recipe
Ingredients:
- 6 chicken thighs
- 3 carrots, roughly cut
- 6 cloves roasted garlic
- 1/2 large onion, roughly cut
- 1 stalk of celery
- 2 teaspoons black peppercorns
- 1 bay leaf
- 1 tablespoon chili flakes
- 3 sachets of gelatin
- 2 tablespoons Cajun seasoning or any spice of choice
- Salt, to taste
- Beetroot juice (optional, for color)
Instructions:
- Place the chicken thighs in a pot along with carrots, celery, onions, black peppercorns, bay leaf, Cajun spice, and salt. Pour enough water to cover the chicken.
- Bring the mixture to a slow simmer and cook until the chicken is fully cooked.
- Once the chicken is cooked, remove it from the water and shred it into smaller pieces, ensuring all bones are removed. Reserve the chicken broth and do not discard it.
- Skim off the fat from 2 cups of the chicken broth. Mix the gelatin with the broth, whisking until it dissolves completely according to the instructions on the gelatin packet.
- In a blender, combine the liquid, shredded chicken, and roasted garlic. Blend until smooth.
- Taste the mixture and adjust seasoning if necessary.
- Optional: Add beetroot juice for color.
- Pour the mixture into a mold and refrigerate until set, approximately 6 hours.
