Savory Delight: Ground Beef and Potatoes

As a dedicated flavor enthusiast, my perception of the classic phrase “meat and potatoes” has undergone a delightful transformation. Contrary to my previous beliefs, this straightforward recipe for Ground Beef and Potatoes unfolds into a culinary experience that surpasses the simplicity of fried potatoes and hamburger.

This delectable ground beef dinner not only captivates with its rich flavors but also fulfills the criteria of a satisfying and nutritious addition to our healthy meal repertoire.

Ingredients:

  • 1 medium Russet potato or 2 white potatoes, peeled and diced
  • 1 pound ground chuck
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1 clove minced garlic
  • 1 small white onion, diced
  • 2 large Roma tomatoes, roughly chopped
  • 1 to 2 serrano chiles, roughly chopped
  • 1/4 cup water
  • Pinch of salt and Mexican oregano

Instructions:

  1. Begin by preheating 1/8 to 1/4 cup of olive oil in a nonstick pan over medium heat. Add the diced potatoes and cook until they achieve a golden-brown crispiness, occasionally covering them to expedite the cooking process. Transfer the potatoes to a plate lined with paper towels to drain, setting them aside.
  2. In the same skillet, introduce the ground beef over medium/high heat. Season the beef with 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon cumin, and 1/2 teaspoon pepper. Allow it to cook for 8 to 10 minutes until it develops a delightful brown hue.
  3. Incorporate minced garlic and diced onion, continuing to cook for an additional 2 to 3 minutes. Blend tomatoes, serranos, 1/4 cup water, salt, and oregano until smooth.
  4. Pour the tomato mixture into the beef, allowing it to come to a boil. Adjust the seasoning to your taste. Gently fold in the potatoes, ensuring an even combination.
  5. Taste for seasoning and let the mixture simmer at a low heat until the sauce thickens and reduces, approximately 7-10 minutes.
  6. Once the desired consistency is achieved, remove from heat and savor the delicious blend of flavors in this Ground Beef and Potatoes masterpiece.
