Grilled Steak Fajitas Recipe

Ingredients:

  • 2 pounds of skirt, flank, sirloin, or hanger steak, sliced into ½-inch strips
  • 1 red pepper, deseeded and thinly sliced
  • 1 green or yellow pepper, deseeded and thinly sliced
  • 1 medium onion, peeled and thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Pinch of cayenne pepper
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 cloves garlic, minced
  • 6-8 tortillas, warmed

Instructions:

Step 1: Marinating the Ingredients

  1. Place the steak in a sealable bag and the peppers with onions in a separate bag.
  2. In a jar, combine olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and minced garlic. Shake well.
  3. Pour ⅓ of the marinade over the steak, ⅓ over the vegetables, and reserve the remaining marinade. Seal bags and refrigerate for one hour to overnight.

Step 2: Cooking

  1. Heat a large skillet over medium-high heat.
  2. Cook the vegetables until tender-crisp (about 5 minutes) and set them aside on a plate.
  3. Cook steak strips in the same skillet until done (about 7-10 minutes).
  4. Add the reserved marinade and the cooked vegetables back to the skillet.

Step 3: Serving

  • Serve the steak fajitas with warm tortillas.
  • Add optional garnishes according to your preference.
