Ingredients:

  • 8 slices of your favorite sturdy bread (sourdough recommended)
  • 2 cups sharp cheddar cheese, grated
  • 1/2 cup cream cheese, softened
  • 1/3 cup mayonnaise
  • 1 (4 oz) jar pimientos, drained and chopped
  • 2 tablespoons unsalted butter, room temperature
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • A dash of hot sauce or cayenne pepper for a little kick (optional)

Directions:

  1. In a mixing bowl, combine the grated cheddar cheese, cream cheese, mayonnaise, chopped pimientos, garlic powder, and a pinch of salt and pepper. For a spicy twist, add hot sauce or cayenne pepper.
  2. Butter one side of each bread slice evenly, ensuring full coverage from edge to edge.
  3. On the non-buttered side of four bread slices, generously spread the pimiento cheese mixture.
  4. Top with the remaining bread slices, buttered side facing up.
  5. Preheat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese has melted, approximately 3-4 minutes per side.
