Grilled Pimiento Cheese Sandwiches
Ingredients:
- 8 slices of your favorite sturdy bread (sourdough recommended)
- 2 cups sharp cheddar cheese, grated
- 1/2 cup cream cheese, softened
- 1/3 cup mayonnaise
- 1 (4 oz) jar pimientos, drained and chopped
- 2 tablespoons unsalted butter, room temperature
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- A dash of hot sauce or cayenne pepper for a little kick (optional)
Directions:
- In a mixing bowl, combine the grated cheddar cheese, cream cheese, mayonnaise, chopped pimientos, garlic powder, and a pinch of salt and pepper. For a spicy twist, add hot sauce or cayenne pepper.
- Butter one side of each bread slice evenly, ensuring full coverage from edge to edge.
- On the non-buttered side of four bread slices, generously spread the pimiento cheese mixture.
- Top with the remaining bread slices, buttered side facing up.
- Preheat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese has melted, approximately 3-4 minutes per side.
- Serve immediately, slicing diagonally to enjoy the comforting aroma and warmth.
Variations & Tips:
- Experiment with different cheeses. A blend of cheddar and Monterey Jack can offer a milder flavor.
- Enhance your sandwich with add-ins like crispy bacon, sliced tomatoes, or jalapeƱos for a special touch.
- For a lighter option, substitute mayonnaise with Greek yogurt.
- Patience is key. Cooking on medium heat ensures your bread achieves a perfect golden crisp while the cheese melts thoroughly.
