Grandma’s Fluffy Apple Pie
Ingredients:
- For the batter:
- 2 eggs
- 125 g sugar
- 100 g butter
- 100 g flour
- 1 teaspoon baking powder
- For the filling:
- 750 g apples (Cox Orange)
- 2 packs custard powder
- 0.5 liter apple juice (½ for stewing apples, ½ for pudding)
- For the topping:
- 3 eggs
- 1 cup sour cream
- 5 tablespoons sugar
Instructions:
- Preheat your oven to 180 degrees Celsius.
- In a bowl, prepare the batter by mixing eggs, sugar, butter, flour, and baking powder until smooth. Pour the batter into a springform pan and bake for about 20 minutes until lightly golden.
- Meanwhile, core, peel, and stew the apples in a little apple juice until tender. Drain them on a sieve.
- In a saucepan, bring ½ liter of apple juice to a boil. Stir in the custard powder until thickened. Fold in the stewed apples and bring to a boil until the mixture thickens. Pour the apple mixture onto the pre-baked dough and bake for an additional 5 minutes.
- For the topping, separate the eggs. Beat the egg whites until stiff peaks form. In another bowl, mix the egg yolks, sour cream, and sugar, then fold in the beaten egg whites. Spread the mixture evenly over the cake and continue baking until the topping is golden yellow.
- Allow the cake to cool slightly with the oven door slightly open. Remove it from the tin only when completely cooled.
