Gourmet Slow Cooker Chicken Scampi Recipe
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1 teaspoon Italian seasoning
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Directions
- In a large resealable plastic bag, combine the flour, salt, and pepper. Add the chicken breasts, seal the bag, and shake until the chicken is well coated.
- Heat the olive oil in a skillet over medium heat. Add the chicken and cook until golden brown on each side, approximately 3-4 minutes per side.
- Transfer the browned chicken to the slow cooker.
- Using the same skillet, sauté the minced garlic and sliced bell peppers until they are just tender. Pour this mixture over the chicken in the slow cooker.
- In a small bowl, mix together the chicken broth, lemon juice, and Italian seasoning. Pour this mixture over the chicken and peppers in the slow cooker.
- Cover and cook on low for 4-5 hours, or until the chicken is tender.
- Before serving, sprinkle with chopped parsley and grated Parmesan cheese.
Variations & Tips
- For a spicy version, add a teaspoon of red pepper flakes with the Italian seasoning.
- For a seafood twist, add shrimp during the last 30 minutes of cooking.
- If you prefer extra sauce, double the amounts of chicken broth and lemon juice to ensure there’s plenty for drizzling over pasta or soaking up with bread.
