Gourmet Loaded Broccoli Potato Pan Recipe

Ingredients:

  • 2 to 3 pounds of skinless chicken breast
  • 2 bags of raw extra-large shrimp (peeled and deveined)
  • 5 lb bag of red skin potatoes
  • 2 bags of broccoli florets (steamable bags)
  • 8 oz bags of Cheddar Cheese and Monterey Jack Cheese blend
  • 3 sticks of butter
  • Old Bay seasoning
  • Parsley Flakes
  • Minced Garlic

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Red Skin Potatoes:
    • Wash and dice the red skin potatoes into bite-sized pieces.
    • Melt one stick of butter and pour it over the diced potatoes.
    • Season with Old Bay seasoning and minced garlic to taste.
    • Toss the potatoes to evenly coat them with butter and seasonings.
    • Transfer to a large baking dish and bake for 20-25 minutes or until slightly softened.
  3. Prepare the Chicken:
    • Season chicken breasts with Old Bay seasoning and minced garlic.
    • Slice the chicken into strips or leave whole based on preference.
    • Cook in a skillet with melted butter until browned and cooked through.
    • Set the cooked chicken aside.
  4. Prepare the Shrimp:
    • In the same skillet, cook peeled and deveined shrimp until pink and cooked through.
    • Set the cooked shrimp aside.
  5. Steam the Broccoli:
    • Steam the broccoli florets according to the instructions on the steamable bags.
  6. Layer and Bake:
    • Once the potatoes are partially cooked, remove them from the oven.
    • Layer the partially cooked potatoes with the cooked chicken, shrimp, and steamed broccoli in the baking dish.
    • Top with the Cheddar Cheese and Monterey Jack Cheese blend.
    • Cut the remaining two sticks of butter into small pieces and distribute evenly over the top.
    • Sprinkle parsley flakes for added flavor and presentation.
  7. Bake Again:
    • Cover the baking dish with aluminum foil and return to the oven.
    • Bake for an additional 20-25 minutes or until the cheese is melted and bubbly, and the potatoes are tender.
  8. Serve:
